Garlic Roasted Potatoes

I grew up in a meat and potatoes household. We had potatoes several times a week: mashed, fried, baked, you name it! I happen to love potatoes any way I can get them and could easily eat them every single day. Quick roasted potatoes have been my side dish of choice for as long as I can remember.

My husband grew up in a rice household. His mom is Peruvian and rice is where it’s at. Now don’t get me wrong, I love me some rice but if I ever had to choose… it would be potatoes every time.

It’s taken a good decade to bring him over to the dark side….potatoes! I have had to convince him over time, feeding him perfectly cooked potatoes, that these are the carb of choice. He’s grown to love potatoes… A LOT. My Twice Baked Potato Casserole is one of his very favorite dishes, along with these easy garlic roasted potatoes.

What Potatoes Should I Use?

Today I’m sharing a tried and true favorite in our house, Garlic Roasted Potatoes. The recipe couldn’t be simpler and can be made with virtually any potato: red, white, Yukon gold. I am particularly fond of roasted red potatoes, roasted russet potatoes, and roasted baby potatoes.

For this recipe, I used some Russian banana fingerling potatoes that came in my weekly produce box and they worked beautifully.

How Do I Get Perfectly Oven Roasted Potatoes?

  • The trick to perfect roasting is to make sure that the potatoes are all roughly the same size. Cutting the potatoes to similar sizes ensures even cooking. If you are using larger potatoes, just cut to bite-size pieces.
  • You also want to make sure to adequately dry your potatoes before roasting. This gets the skin nice and crispy instead of soft. Crispy roasted potatoes are a must!
  • Use a little olive oil to rub onto the potatoes. This is necessary in any oven roasted potatoes recipe. Not only does this help them get a crispy exterior, it helps the seasoning to stick on better.

What Do I Need To Make Garlic Roasted Potatoes?

This recipe is incredibly simple and uses only a handful of ingredients:

  • Russian banana fingerling potatoes or other red, Yukon, or white potatoes
  • olive oil
  • kosher salt
  • ground black pepper
  • garlic minced
  • fresh parsley – to garnish (optional)
  • Feel free to double the recipe…these potatoes are a great addition to breakfast.

    Garlic Roasted Potatoes

    Ingredients

    • 2 pounds Russian banana fingerling potatoes or other red, Yukon, or white potatoes
    • 2 tbsp olive oil
    • 1 tsp kosher salt
    • 1/2 tsp fresh ground black pepper
    • 2 to 3 cloves of garlic minced
    • 2 tbsp fresh parsley minced

    Instructions

    • Preheat the oven to 400F.

    • Scrub the potatoes clean and pat dry with a towel.

    • Cut the potatoes in half (or quarters, depending on the size of the potato) and place on a small, rimmed baking sheet.

    • Drizzle the olive oil on top of the potatoes, add garlic, and season with salt and pepper. (Hint: Use a garlic press to mince garlic.)

    • Toss the potatoes with tongs or your hands until the potatoes are evenly coated. Spread the potatoes into a single layer.

    • Roast in the preheated oven for 35 to 45 minutes or until golden brown and crispy. Flip the potatoes every 10 to 15 minutes to ensure all sides of the potatoes get nice and crispy.

    • Remove the potatoes from the oven and toss with fresh parsley. Check for seasoning before serving hot.
